This Coconut Matcha Cloud is our favourite way to enjoy Hikari Ceremonial Grade Matcha when the weather calls for something cooling, mineral-rich, and quietly energising. coconut base

✦ 250 ml chilled coconut water

✦ Ice

matcha cloud foam

✦ 4 g Hikari Ceremonial Grade Matcha

✦ 40 ml warm water (not hot)

✦ 120 ml vegan thickened cream
(or chilled coconut cream)

✦ 15–25 ml maple syrup or agave
(to taste)

method

prepare the coconut base:

✦ Fill a glass with ice and pour over the chilled coconut water. Set aside.

whisk the matcha:

✦ Sift the matcha into a bowl. Add the warm water and whisk until completely smooth, ensuring no clumps remain.

create the cloud:

✦ Add the vegan thickened cream (or coconut cream) and sweetener to the matcha. Use a handheld milk frother, small blender or hand whisk to aerate until thick, silky, and cloud-like.

assemble & serve:

✦ Gently spoon or pour the matcha cloud over the coconut water, allowing it to float naturally on top.

✦ Sip through the layers for contrast, or gently stir to combine before drinking.
